Snow peas are a snappy, flavorful vegetable loaded with health benefits. They are typically available in late winter and early spring, but you can enjoy them year round with an indoor planter. They are an excellent topper for salads, and are used in many Asian dishes and stir fry.

A half cup of snowpeas contains approximately 55 calories and 3.6 grams of protein. They are high in fiber and low in fat, plus they contain more than 20% of the recommended daily amounts of Vitamin C and Vitamin A. Snow peas are rich in flavonoids that help reduce inflammation and asthma.

Crunchy Bean Mix

This blend includes green peas, garbanzo beans, red and green lentils. This mix of legumes covers a lot of bases - they can be used for vegetable soup, cooked with rice, served on salads, or ground into paste for spreads.

Green peas have 58 calories and 3.9 grams of protein per half cup. They are rich in fiber and carbs, but low in fat. Peas are an excellent source of folate, zinc, Vitamin A, and Vitamin C. These nutrients have a strong effect in boosting the immune system and promoting general health.

Green lentils and Red lentils are widely used in Indian cuisine - puréed Lentils are called dhal. A half cup of lentils contains 115 calories and 8.9 grams of protein. They are very high in fiber and low in fat. Lentils also contain elevated levels of iron, potassium, folate, and niacin. They are recommended for vegetarians who need to supplement their diet with additional iron and protein.

Mung Beans

Mung Beans are also known as Indian green beans, moong, mash bean, munggo or monggo, green gram, golden gram, and green soy. These sproughts are a versatile part of Indian and Chinese recipes, and they're used to complement many dishes with a heavy sauce or spice. Starch from these beans is also used to make certain Chinese and Vietnamese dishes (such as the wrapping of Spring rolls).

A half cup of Mung Beans has 106 calories and 7.1 grams of protein. Mung Beans are a low fat, high fiber food, with excellent levels of folate, thiamin, iron, magnesium, phosphorus, and potassium. Unlike other beans, Mung Beans are gentle on the stomach and recommended for treating indigestion.
