Why is a non-porous pot important?
Have you ever heated up a pan that was used to make fish and noticed a fishy smell? Unlike cast iron or aluminum pots, this pot is nonporous. That means the pot will not absorb flavors from previous meals and it will not grow harmful bacteria or mold.
Metal pots expand at high temperatures, which causes microscopic pores to open up in the metal. These pores soak up a little bit of food and then close as the pot cools down. Between uses, bacteria often grow on this trapped food residue. When cast iron pots are re-used, the pores open up again and bacteria can be released. This ceramic pot has none of those problems!
